You probably noticed that all my recipes so far have bananas included. That’s because they’re versatile, there’s many things you can cook with them and they taste great! This time I have decided to make banana pancakes and you will only need two ingredients for this recipe, so let’s get baking!
The ingredients you’ll need:
1 medium – big sized banana
Start by peeling the banana and mashing it with a fork. Mash it to the point where it’s runny and has smooth texture.
Now, add the egg and whisk it all together. This is your batter, you’re free to add oats or protein powder, if you want your pancakes to have more nutritional value. Add cinnamon or cocoa powder if you want flavoured pancakes. When you’ve decided what kind of pancakes you want, heat your pan (a non-stick pan is required). Spray a tiny bit of oil and pour the batter when you’re ready. In order to have fluffy, yummy pancakes, the amount of batter you pour should be small. My measurement is 1 – 1 ½ table spoon for one pancake (yes, they will be tiny but you’ll end up with so many of them). Each pancake should be baked for about 2 minutes on each side. The best way to recognise when to flip your pancake is when you notice bubbles appearing on the top (like shown in the picture below).
Repeat this process until you’ve used up all your batter. How you top your pancakes is completely up to you, get creative! I just stacked my pancakes and poured some peanut butter over the top.
